During aging - the time a brandy spends in oak barrels - blending also takes place. New brandy is blended with older brandy to achieve the right balance of flavors.
Since the aging process is so important in brandymaking, we choose grape varieties like French Colombard, Grenache and Barbera for our E&J brandies, as these varietals develop exceptional flavors as they age.
